1 beaten egg
1 cup milk
1 cup coarsely crushed saltines
1 17 oz can cream corn
1 8 oz can corn (drained)
1/4 cup finely chopped onion
combine egg, mil. 2/3 cup cracker crubs, 1/4 tsp salt and dash pepper. Stir in corn, onion. pour into 1 qt casserole. Sprinkle remaining cracker crumbs on top. Bake in 350 degree oven one hour or until knife inserted near center comes out clean.
*notes, I use oyster crackers as that seems to be all we ever have. Original recipe calls for 3 tbs of chopped pimento, which we never have (unless I want to tear apart olives.)
I could see adding drained green chiles to this….It is very very very good the next day.

This is SO GOOD! I’ve made it for people who have then asked for the recipe, and now this is their “signature” pot luck dish. I have to double it always, and it is always gone.
Homemade Crock-Pot Mac & Cheese Recipe (doubled)
1 (16 ounce) package macaroni, cooked and drained
4 tablespoons oil
2 (13 ounce) cans evaporated milk
3 cups milk
2 teaspoon salt
6 cups shredded sharp cheese
1/2 cup melted butter
Toss cooked macaroni in 4 tablespoons oil in large bowl.
Add all remaining ingredients.
Pour into lightly greased crock-pot.
Stir well.
Cover and cook on low for 3-4 hours.
Stir occasionally.

Yes, Momsk, totally … it got me t actually start using my estore code binder. I got it probably over a year ago and it is pretty, lol … now using it, pages for themes, clothing, etc… the goal: be organized and know, easily, what I have already bought π
