Strawberry Pie Recipe – from momskinz
Crust – homemade if you are dee or a deep dish frozen crust if you are momskinz
3 oz cream cheese (at room temperature or softened)
1+ quart of strawberries (clean & hulled)
1 cup sugar
3 tbl corn starch
8 oz Cool Whip
Bake crust as directed & set aside to cool
Spread cream cheese to cover bottom of the cooked pie crust
Stand whole berries up with removed stem end down as close as possible to each other on crust to cover entire bottom of pie crust
Slice & mash remaining berries & add water to make 1 1/2 cups of “berry juice”
Pour berry juice in sauce pan, heat to boil
Mix sugar & corn starch together, then add slowly to boiling juice, stirring constantly, allowing it to dissolve & thicken.
Allow to boil for 1 minute.
Cool thickened berry juice to room temp (on counter or in fridge)
Pour over berries in pie crust
Cover entire top of pie with cool whip
Chill several hours or overnight
I spread the cream cheese up on the sides just a little to cover where the crust curves from the bottom to the sides to help keep the crust along that crease from getting as soggy.
I use more than a quart of berries if i have them & sometimes end up with just a little water in the juice.
I prefer lite cool whip.
If my berries are super sweet & flavorful, sometimes I reduce the sugar maybe to 3/4 cup ish.
