It appears that my memory isn’t what it use to be! (shocker I know) but I’ve been thinking that moms bday was the 17th, or 19th & alas I remembered wrong (again SHOCKER)… sooooooo it’s time to wish her a nice Belated Happy Birthday!!  Ten days late isn’t “that” bad, right?Â

make the pancakes ahead of time & either freeze them, or have them in the fridge…then you can warm them in the oven maybe so your not warming up plate after plate?

Cook breakfast sausage crumbled up drain
Let it cool a bit then mix into cream cheese.
You take the canned croissants. On a baking sheet you spread them flat covering the bottom. Cover with the sausage mixture.
Then another layer if the croissants on top brush with butter and bake

These are good and can be made in advance
Baked Oatmeal Muffins:
Ingredients
2 eggs
¼ cup canola oil
1 cup packed brown sugar
½ cup applesauce
1½ cups skim milk (or whatever milk you like)
2 tsp. vanilla extract
½ tsp. salt
1 tbsp. ground cinnamon
3 cups old fashioned rolled oats
2 tsp. baking powder
Optional: your favorite toppings (fruit, nuts, chocolate chips, etc.)
Instructions
1.Preheat the oven to 350 degrees. Line a muffin tin with paper or paper/foil muffin liners.
2.In a large bowl, whisk the eggs, oil, and brown sugar until sugar is dissolved. Add the applesauce, milk, vanilla, salt, and cinnamon. Whisk until well combined. Stir in the oats and baking powder.
3.Fill the muffin tin with ¼ cup of the oat mixture in each muffin cup. Add your favorite toppings. Push the toppings down into the oat mixture with a spoon.
4.Bake for 30 minutes. Let them cool for 5 minutes before eating. Store in an airtight container or freeze in a zip top storage bag.
Notes
Don’t skip the muffin liners in this recipe

Red Lobster biscuits… so yummy. I don’t know if you have them in the States, but in Canada Costco I buy a dry mix of “Red Lobster Biscuits”. They taste bang on, bit in the comfort of my home.

I found the red lobster bisquit mix at big lots for a buck….pretty good, but just as good as the bisquick ones……….
dh got a “dump” crockpot cookbook for Christmas, so will look in there for breakfast recipes……..bisquits and gravy is nice………bake bisquits ahead of time and do up the gravy in the crockpot???

Hi CWC. Sorry I didn’t make it on webkinz, AW or here at all yesterday. Happy Belated birthday to Moms. I missed the ice bed was hoping the links still worked but nope. I did grab a couple yeti forests. I have gotten four snowflakes so far total. Everything is OK is real life just some online drama and some nice things keeping me busy. Did some stuff with younger daughter and her friend the last couple of days. Hubby and the girls had work and school off today. I have read many of the comments but not all of them going to try and grab a couple of snowflakes before the day changes.
